Delicious feta bites

These scrumptious, bite-size watermelon chunks, topped with creamy feta, balsamic, and just a touch of mint, are as tasty an appetizer as they are refreshing!

Ingredients:

  • Watermelon

  • Whole feta (not crumbles)

  • Balsamic vinegar reduction

  • Mint leaves

Instructions:

  1. Cube watermelon and feta into bite sized morsels.

  2. Stack a watermelon cube (bottom), mint leaf, and feta on a toothpick or decorative skewer.

  3. Drizzle balsamic reduction over the top.

Refreshing

fruit salsa

Salsa is the perfect summer dip—but there’s only one thing that can make it better—adding seasonal fruit! With crisp apples, juicy pineapple, colorful strawberries, and kiwi, it’s a great addition to any cookout!

Ingredients:

  • 1 pint strawberries

  • 2 kiwifruit

  • 1 Granny Smith apple

  • ¼ cup sugar

  • 2 tablespoons pineapple juice

Instructions:

  1. Prep the fruit—remove caps from strawberries, and peel kiwis.

  2. Dice all of the fruit into small pieces, and combine together in a small bowl.

  3. Add the sugar and pineapple juice. Mix completely.

  4. Cover and refrigerate overnight. Serve chilled.

Frozen ice pops

Nothing tastes better or more refreshing on a hot summer day than an ice pop, and they’ve come a long way since you were a kid. More than just the standard flavors, these fun treats are frozen twists on some of summer’s best beverages. The best part? They couldn’t be easier to make!

So, whether you’re looking for a fun DIY project or just want to spice up your backyard BBQ, try these fun and unique popsicle recipes. Just combine all of the ingredients, freeze overnight, and enjoy!

Strawberry Lemonade

Ingredients:

  • 1 cup fresh lemon juice (juice from 4-6 lemons)

  • ½ cup hot water

  • ⅓ cup sugar

  • Sliced strawberries, as many as desired

Root Beer Float

Ingredients:

  • 12-16 ounces of root beer

  • 1-2 scoops vanilla ice cream

  • Tip: Pour the root beer into your mold, then add the desired amount of ice cream.

Sangria (for the adults)

Ingredients:

  • 1 bottle of white wine

  • ½ cup apple juice

  • ½ cup cherry juice

  • Mixture of sliced fruit, such as blueberries, strawberries, and grapes

There are so many more combinations that can be created to spice up the traditional ice pop!
